I recall cooking with my mom, observing how she created each step to achieve the fluffy and fragrant rice. And the crust is such a delicious mixture of great and sweet that it always puts me in the running for family favorite. We always growl, “Fried rice no lose ehva!”

This Golden Shrimp Fried Rice can stand on its own as a meal or you can add it with other sides and/or proteins. This is not just about feeding yourself — it’s about having a beautiful meal that pleases the senses! It’s got that pan sauce thing happening, is ready in 20 minutes and only requires about a dozen ingredients, which makes this an inexpensive choice for those running low but still want to impress whoever they’re serving.

Memories Wrapped in Flavor

Thinking back to my mom and her journey in the kitchen, I am happy to be continuing what she started. From this favorite recipe I have learned a lot about the art of cooking and the importance of family traditions. There is something about fried rice which makes everyone call a party and it gives rise to silly laughter!! So much more than a comfort food, it is a token of love, care and the rich taste of memory that can bring all pause to enjoy.

What is “Golden” fried rice?

The technique for perfecting that flavor and color (or golden, as in the name) is a Chinese cooking method. The rice is usually leftover, so they stir them in yolks of eggs. This step imparts to the rice a savory, desirable eggy nose and a lovely almost golden shade. In a lot of recipes turmeric is added to turn the rice yellow, but my mom never used it because of this, her biriyani looked different but was equally delicious. Feel free to add some turmeric for super health!

In this dish, the shrimp adds a wonderful umami taste that complements the richness of the egg sauce. The best thing is that the sauce, silky as a dream, is spooned over this golden rice. The piperade, which is truly a light creamy custard, offers an even richer depth of flavor and enlightened texture which makes it the star of the show!

This is a dish that I remember my mom making us as kids and us always loving the smell of it in the air, waiting for everyone to get their place at the table.

Every bite is a journey of an amazing combination of flavors from the shrimp, egg yolks and this super smooth sauce. You see, this meal is not only delicious but tells a tale of heritage and love in cooking. Whether cooked in the comfort of your own place, or dished up to guests, Golden fried rice will have everyone talking.

How to make The Best fried rice

Follow these basic steps and use long grain rice, as with Mahatma® Jasmine White Rice, for the perfect Golden Shrimp Fried Rice. It provides the dish with the correct texture which is not too gluey.
