- 1/4 tsp cellulose gum or 2 tsp cornstarch
Instructions
Wash strawberries in cold water and keep aside for atleast 5 minutes. Rinse clean under cold water once more. Chop into desired size chunks You can prepare these chunks and add them to the popsicle mold for more texture! Sprinkle sugar over the strawberries and allow them to mascerate for 20 minutes.
Puree the macerated strawberries, yielding 1 ½ to 2 cups of smooth juice. Add them to another bowl with the heavy cream, crema, sweetened condensed milk, salt and cellulose gum in that order and then use an electric mixer to combine. [At this point, start mixing until the cream becomes thick] Sugar + cellulose gum = stabilizing agent, prevents paletas from turning into ice cream chaos.
In a small saucepan whisk the heavy cream, crema, salt and sweetened condensed milkIf you using cornstarch mix together and cook over low heat. Stir until smooth, then pour about ¼ cup into a small bowl along with the cornstarch and whisk until smooth. Transfer back to the pot and heat on low until it thickens. Let it cool down completely.
Pour the strawberry mixture into the bottoms of Popsicle molds and dot with any remaining strawberries. Pay attention to where you place the popsicle stick! It should be centered and not pushed down all the way so there is something for you to hold onto. Freeze for at least 8 hours. Run the paletas mold under warm water for 20 seconds to remove them. If necessary, stretch the sides of silicone mold. You can store the paletas in the freezer for up to 2 weeks, but they will start collecting ice crystals over time.
